Colombia Banda Rebelde

Coming to us from Finca La Esperanza located in the municipality of La Plata of southwest Colombia, this coffee undergoes two separate 36 hour fermentations. The first fermentation occurs soon after the cherries are picked and sorted for defects, while still in full cherry form. Next, the coffee is pulped and rinsed to remove the outer fruit layer. Then, the second fermentation takes place in closed tanks where the seeds are submerged in water. Two fermentations later, the seeds are washed, dried, and stored in GrainPro bags until they're ready to be transported to the dry mill for final processing.
