This lot came through the same mill near Laguna de Ayarza as our washed Blue Ayarza, where smallholders from around the lake sell their ripe cherry, and it took the long way. Whole cherries fermented five days sealed away from oxygen, then dried in the sun with the fruit still on. In the cup, cordial cherry, mulled wine, and chocolate sourdough, with a juicy body and boozy, tropical acidity.
