This coffee comes from the Halo Beriti Washing Station in the prized Yirgacheffe region of Ethiopia. 750 smallholder farmers deliver their coffee in cherry form to this washing station, and this particular lot is part of a “special preparation” in which meticulous hand sorting was done repeatedly throughout the receiving and drying process. In addition, farmers in this region don't have access to and therefore do not use fertilizers and pesticides in the production of coffee.

While this coffee cannot be traced to a single variety, it is composed of native heirloom varieties cultivated only in Ethiopia. High elevation coffees like this one are known to be some of the best in the world, with cooler temps slowing down the growth rate and allowing the plant to focus on bean production, resulting in more sugars in the bean that create deeper flavor profiles.
