Six mountain communities in Oaxaca's Sierra Sur grow this coffee together as Sicobi, around 500 growers who still ferment in wooden tanks and manage their land alongside a group of biologists. It's the tenth fall we've roasted Sicobi for Día de los Muertos, and this year's lot came across our table as hazelnut, snickerdoodle, and tiramisu, with a buttery body to carry it.
