Third generation coffee farmer, Don Jorge Zamora Soto owns and operates a farm and mill, where the focus is on high-quality specialty coffee. On the farm is also located a quality lab, roasting facility, and the mill.
Originally, the mill processed coffee for national commodity brands. But in 2019, Don Jorge and his eldest son decided to focus solely on specialty coffee. They did the same at their own 9-hectare farm, where they now focus on micro-lots, dividing up plots by how it will be processed, and by varieties such as Sarchimor, Geisha, Pacamara, and Villa Sarchi. Every day during the harvest season, they take Brix readings of coffee cherries in order to determine the optimal time to pick, as opposed to harvesting an entire tree at a time. While this results in higher labor costs and requires more care, the coffee produced is clearly exceptional.
In 2022, their on-farm mill reopened, processing exclusively honey-processed coffees. Thus, this natural/sun-dried processed coffee was sent to a nearby mill operated by La Victorina Coffee.
