Miller Ñañez (pronounced "me-air") is one of the newest members of the Los Guárachos producer group growing coffee in Huila, Colombia. Members of Los Guárachos actively work towards using more organic farming practices (which we love!) by making their own fertilizers, fungicides, and water filtration systems which use natural resources like stones and sand to clean the water used for coffee processing. These additional steps help to minimize pollution back into their soils and waterways. The fertilizer that they make is called super magro - a stinky/sweet and beautiful fermentation made up of organic materials and microorganisms collected from virgin soils. This super magro improves soil health, reduces farmers’ costs, and helps protect coffee plants from some diseases.
Since Miller is one of the newest producers in Los Guárachos, his pink bourbon trees are around 6-7 years old and although he doesn't have the funds for proper fermentation tanks yet, he's had to get creative in order to achieve low-oxygen fermentation practices. Cherries are picked ripe and undergo an initial fermentation in Grain Pro bags that help to limit the amount of oxygen. Then they are de-pulped and moved back into sealed Grain Pro bags for a second round of low-oxygen fermentation before being washed and dried.
