Colombia Diego Horta

Diego Horta is a third generation coffee producer in Santa María, Huila, a pioneering region of specialty coffees in Colombia. In 2018 Diego, being 20 years old at the time, took on the challenge of operating the farm, Finca el Rincón, located at vereda el encanto, Santa María. From the very beginning, he focused on producing specialty coffees, growing new varieties, and performing exotic processes. Nowadays, Diego Horta is recognized as a young leader that advocates for the generational continuation of coffee growing in Huila and is a producer of amazing differentiated profiles. This lot underwent two days of fermentation with the skin and fruit in tact. Afterwards, de-puling was performed, leaving the rich mucilage layer fully intact (as opposed to removing all of the mucilage and fruit for a "fully washed" process). It was then transferred to greenhouses (marquesinas) and raised African beds, where it dried slowly under controlled ventilation until reaching the optimal moisture content. The "Honey" process gets its name from how sticky the coffee is during and after the fermentation process, due to the mucliage left in tact during this stage of the process.
