Each producer, with its small scale production, is able to carefully manage the picking and sorting of coffee cherries, ensuring ripeness and quality. After picking, they are sorted again to remove damaged and under ripe cherries.\r\n\u003cbr\u003e\u003cbr\u003e\r\nEach producer processes coffee with their own micro-mill where the coffee is depulped and fermented for 24 hours and then washed. The washed coffee is then placed into parchment, dried in the sun on patios, then transported to a centrally located dry mill facility.
